With Father’s Day just around the corner, I’ve been busy trying to create the perfect recipe that my husband would love.
We typically grill on Father’s Day, and I wanted to create a dish that shows my husband how much I love and care for him. I decided to create some kind of tropical, summer grilling recipe, reminiscent of our trip to Hawaii together a few years ago. But what to make?
I headed to World Market for some inspiration, and found some delicious gourmet ingredients that inspired me to create an amazing dish-
Coconut macadamia mango crusted mahi mahi…
If you could taste the tropics, I imagine they would taste like this dinner.
Crushed roasted coconut + sea salt macadamia nuts + dried mango pieces = pure heaven for your taste buds.
This dish uses all-natural ingredients (minus the fresh fish), and was so easy to prepare and make. It tastes like a dish you would order at a high end restaurant in Hawaii, but can be made at home for much less!
Here are the stars of the coconut macadamia mango crusted mahi mahi that I bought at World Market…
I was a little nervous at first about cooking a crusted fish on the grill, so I bought this non-stick grill basket I found at World Market so that the crust coating would not stick to the grill.
I fell in love with this large light blue serving dish- you can see through it slightly, and it reminded me of sea glass. The perfect serving dish for my mahi mahi.
I bought some fresh mahi mahi fillets at the grocery store, and got to work.
First I combined two bags of Danielle’s Roasted Coconut Chips (4 oz. total) and one bag of Royal Hawaiian Sea Salt Macadamias (5 oz.) together in the food processor (a blender would work as well). I pulsed the two ingredients until they were a thick crumb texture.
I removed the mixture, and then pulsed 6 dried mangos. I added the mangos to the coconut and macadamia topping, and stirred to combine. Almost instant coconut macadamia mango topping for the fresh fish!
The tropical smell of my kitchen at this point let me know that I was on the right track, and I couldn’t help but test the crumb topping. Delicious!
Next I drizzled some extra virgin olive oil onto the fish, and made sure that each fillet of fish was evenly coated.
Then I firmly pressed the coconut macadamia mango mixture onto the top of each fillet.
The fillets were placed inside the grilling basket, and onto a medium heat grill.
I started grilling the fish with the topping side up- after approximately 8 minutes, I carefully turned the grilling basket around, and grilled the topping side down for about 5 minutes. Be sure to keep a close eye on the fish when cooking topping side down. You want the topping to be a nice toasted color.
Your cooking time will vary based on the thickness and size of your fish. You will know it is thoroughly cooked when the fish is opaque inside, and flakes easily.
Once the mahi mahi was cooked, I used the grilling basket to grill some asparagus and squash slices that had been drizzled with a little extra virgin olive oil and sprinkled with some salt and pepper. I sauteed them on the stove, and then grilled. Grilling the vegetables gave them such a great flavor that couldn’t have been achieved on the stove.
To plate the mahi mahi, I topped each fillet with some lemon and lime slices, and a piece of dried mango. I made some rice to go with the dish as well.
Since this dish was for a terrific dad, it was only fitting that we drank Dad’s Root Beer, right? Last year for Father’s Day I searched everywhere to find this root beer, so I’ll save you some work- you can find it at World Market in a 4-pack!
The coconut macadamia mango crusted mahi mahi was a HUGE hit with my husband and I, and I was pleasantly surprised that all 4 of my picky kids loved it too! It truly is the perfect blend of ingredients in the topping that make this dish simply amazing.
