Do you crave chocolate like I do? Or does your family ask you what’s for dessert every single night? Well have I got the perfect chocolate cake recipe for you!
On low speed, beat in 2 cups of flour, 2 tsp. baking soda, 1 c. boiling water, and 1/2 c. of milk mixed with 1/2 tsp. white vinegar. (I mix up the milk and the vinegar in a seperate small bowl before I start making the cake, so that is has time to get a little chunky and curdley).
Beat for 1 minute on medium-high speed. I use my Kitchen Aid to mix it all up, and I make sure that I put a dish towel over the mixer at this point because sometimes little drops of chocolate batter start to fly around my kitchen.
Pour the batter into a greased 9×13 pan, and cook for about 40 minutes at 350 degrees. You’ll know it’s finished when a toothpick stuck in the middle of the cake comes out clean.
While you’re waiting oh so patiently for your cake to bake, you can get started on the chocolate frosting. In a medium bowl, beat together 1 stick of butter and 3 Tbsp. cocoa powder. Add 1 1/2 c. powdered sugar and 2-3 Tbsp. milk a little bit at a time, beating on medium speed until it gets to the right consistency. Then beat in 1 tsp vanilla extract. All done!
Frost the cake once it has cooled completely. The directions say to put the frosted cake in the fridge for half an hour so the frosting can firm up, but I, I mean my kids, have never had the patience for that. It’s hard enough to keep everyone away from this cake long enough for it to cool!
