I love everything about fall- the warm vibrant colors, the inviting smells, the cozy blankets, flannels, and sweaters, and the comforting tastes that we associate with fall.
Today I’m sharing with you a recipe for some amazing Apple Cinnamon Coffee Cake Muffins that remind me of fall and are SO good!

This means that I’ll be sharing my awesome Big Lots shopping finds, as well as holiday ideas, recipes, and more using their products. I’m really excited about it! Big Lots carries lots of quality products from brand names at a great value.
I recently went shopping at Big Lots and stocked up on grocery items. If you haven’t checked out their grocery department, you’ve really should. They carry all sorts of name brand products but for much less than you would find at the grocery store, which means more money left in my pocket.
For just under $100, I was able to buy LOTS of groceries for my family. My kids were really excited about all the lunch food and snacks that I bought for us.
Big Lots also had some great deals on soup and other dinner ingredients, which had my soup-loving son smiling all day about all of the tasty soup I had bought. 😉
With the holidays just around the corner, I also picked up some holiday baking staples like sugar, baking soda, baking powder, a Ghirardelli brownie mix, a pumpkin spice bread mix, and a lot more.
I used some of these baking ingredients to make these tasty apple cinnamon coffee cake muffins. These muffins taste just as delicious as your favorite cinnamon coffee cake, but are more convenient to grab and go since they are in muffin form and don’t need to be cut like coffee cake does. I’m all about simplifying!
Apple Cinnamon Coffee Cake Muffins
Ingredients:
For the muffins:
- 3 cups flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 cups sugar
- 3/4 cup butter, softened
- 1 1/2 tsp. vanilla
- 3 eggs
- 1 1/2 cups sour cream (light sour cream is okay)
- 1 large Granny Smith apple
For the cinnamon topping:
- 1 cup brown sugar
- 1/4 tsp. salt
- 1 tsp. cinnamon
Step 1. Preheat the oven to 350 degrees. Add cupcake liners to the inside of a muffin pan or grease the muffin pan.
Step 2. Create the cinnamon topping by combining the brown sugar, 1/4 tsp. salt, and 1 tsp. cinnamon. Set aside.
Step 3. Peel the apple and cut it into small chunks.
Step 4. Combine the flour, baking powder, baking soda, and salt in a bowl. Set aside.
Step 5. Combine the sugar, butter, vanilla, and eggs in a mixer and mix for two minutes on medium speed. Add in the flour, sour cream, and apples. Mix on low until combined.
Step 6. Fill each muffin cup 2/3 full with the batter. Sprinkle on the cinnamon topping. Bake for 20-25 minutes at 350 degrees. Muffins are cooked when a toothpick inserted into the middle of a muffin comes out completely clean.

These apple cinnamon coffee cake muffins taste great for breakfast with a glass of orange juice, or make a great snack or even dessert!
Besides the taste, the next best thing about these muffins is the smell of your home while these are baking. Your house will smell just like fall with those baking apples, cinnamon, and sugar.
