It has been unusually wet and rainy this winter here in Southern California, which I don’t mind at all. That just means more snuggling, more cozy time, and more of this delicious coconut hot chocolate.I’m a lover of all things coconut, so swapping the dairy milk for coconut milk to create this coconut hot chocolate recipe was borderline genius. The coconut milk gives this drink a slight nutty, coconut taste that makes it ultra delicious and ultra warming on a cold day.
This recipe makes one gigantic mug full or two smaller cups, depending on how thirsty you are and how badly you need to warm up. 😉
Coconut Hot Chocolate Recipe
Ingredients:
- 2 cups coconut milk (I use Silk Original coconut milk)
- 2 Tbsp. cocoa
- 2 tsp. sugar
- 1/2 tsp. vanilla
- You can use canned coconut milk, but it is VERY rich and creamy and has a really high fat content. I experimented with this recipe both ways to see which I liked best. It was way too rich for me with the canned coconut milk and I had to water it down with regular coconut milk. The refrigerated coconut milk was much more drinkable and has much less fat.
Directions:
Step 1. Warm up the coconut milk in a small saucepan so it is hot, but not boiling.
Step 2. Add the cocoa, sugar, and vanilla and stir until combined and warm.
This coconut hot chocolate recipe is simple, made from scratch, and is so delicious. It’s the perfect indulgence on a cold day, and tastes even better when you’re wrapped in a blanket sitting by the fire. Ah…..
We enjoyed our coconut hot chocolate cuddled right up by the fire. It’s not a hassle anymore to light a fire because we’ve stocked up on Duraflame fire logs.
When we want a fire now, we just place a log in the fireplace, place a lit match where the two arrows are on the packaging, and we have a warm cozy fire going in just a few minutes. No more pulling straws to see who has to go get the firewood from the yard outside in the cold.
Plus, a Duraflame fire burns much cleaner than a regular wood fire, so we don’t have to deal with the smoke smell of our regular wood, especially when the wood is wet like it has been from our unusual stormy weather here.
