What’s better than green eggs and ham? Green eggs and ham chocolate lollipops of course!
With Dr. Seuss’ birthday coming up on March 2, and my daughter rehearsing for the Seussical play she’s in, I’ve had Dr. Seuss on my mind. I read a Dr. Seuss book every single night without fail to my two youngest, who are huge fans, just like my parents read them to me every night. It’s a wonderful tradition!
This week I’ll be sharing some fun Dr. Seuss treats and crafts, so be sure to check back here daily for more inspiration from one of my favorite authors.
To celebrate Theodore Geisel’s upcoming birthday (and for great treats for my daughter’s Seussical cast friends and teachers), I came up with some fun Dr. Seuss green eggs and ham chocolate lollipops. They are whimsical and fun, just like the book, and are a cinch to make.
Green Eggs and Ham Chocolate Lollipops
- White almond bark (or white chocolate melts)
- Green chocolate melts
- Lollipop sticks
Step 1. Lay down a piece of parchment paper or waxed paper on the counter or a cutting board.
* When I first tried these, I just sprayed cooking spray on my cutting board and when I tried to remove the suckers they all stuck and broke. Don’t do what I did! I tried again, this time with parchment paper, and the suckers came right up. Be sure to use parchment paper or waxed paper!
Step 2. Melt your white almond bark or chocolate melts according to the directions on the package.
Whenever I melt chocolate I use my chocolate melter I bought at Michaels. It’s SO much easier than using the microwave because the chocolate doesn’t cool. It stays warm and at the right temperature in a little heated pot, which means I don’t have to worry about reheating and trying to hurry before the chocolate cools.
Either way will work, but this is the easiest way for me, and has been worth every penny to me since I use it all the time. It’s also great for making chocolate covered strawberries that you might have seen here on my Instagram. If you don’t follow me on Instagram, I’d love to have you join me!
Step 3. Place a little blob of white chocolate down on the parchment paper, then roll the end of the lollipop stick into it to make sure the stick is in there really well. Use a spoon to drop more melted chocolate over the top of the stick so that it looks like an egg from the book.
Your eggs don’t have to look perfect! The eggs in the book aren’t perfect circles, and are a bit whimsical, so I tried to make mine look like they weren’t perfect too, which is kind of hard for a perfectionist to do. 😉
Step 4. Place a green chocolate melt face up into the middle of the white chocolate egg. The melts are perfect circles, and look great as the green yolks.
My green chocolate melts has some white scratches on them that I didn’t want on my eggs, so I simply used my clean finger and wiped it across the surface to remove the white scratches and make it look smoother. See what I mean in the above before and after?
Now just wait for them to cool and harden, then lift up on the stick to remove and they’ll come right up! No sticking like my first batch, because you’re smart and used parchment or waxed paper.
You can store these in an airtight container for a few days if you wanted to make them ahead of time. It’s even better if you use small treat bags over the top, tie with a ribbon or string, then store or give away.
