Yesterday I was craving fresh salsa, so I whipped up a batch in about 5 minutes, including the chopping and cutting time! This salsa even better than the salsa I’m served at all of the delicious Mexican restaurants we have here in San Diego, and tastes so fresh.
It’s perfect with tortilla chips, on top of your favorite Mexican dish, and is a great crowd pleaser for a party. This salsa also tastes amazing on Navajo Fry Bread. Yum! I dare you to not eat the entire batch with your family in one sitting 😉
Since it is winter, and tomatoes are not all that fresh right now, I used two cans of Rotel in place of fresh tomatoes. By the time you add all of the other fresh ingredients, this salsa tastes so fresh you would never guess that there are canned tomatoes in it! In the summertime I will switch out the canned tomatoes for the fresh, but until then, these work great! You seriously can’t mess up this recipe!
This recipe will give you a medium amount of heat, which is just perfect for me. If you don’t like it as hot, then omit the jalapeno, or even substitute a can of Rotel for a can of diced tomatoes. If you like more spice, then add more jalapeno and include the seeds. You can play around with the recipe until you get just the amount of heat that you like!
Delicious Homemade Salsa:
2 cans of Rotel with Cilantro & Lime (include the liquid)
1/2 onion chopped
2 cloves garlic
Big bunch of cilantro leaves (stems removed)
1/4 of jalapeno (seeds and ribs removed)
Juice of one lime
1/2 tsp. salt
1 tsp. cumin
Pulse all the ingredients in your food processor blender until you reach desired consistency.
Eat and enjoy! I usually double this batch and store it in the fridge in a mason jar, but it honestly doesn’t last too long around here… it’s soooo addicting. Enjoy!!
