My husband is actually the one who started experimenting with making homemade granola and got me hooked. He likes food to be uncomplicated and simple, so this recipe is pretty simple. It’s a good base and starting off point for adding some of your favorite flavors and textures.
Simple Granola Recipe
Ingredients:
- 3 cups rolled oats (not quick oats)
- 1/4 cup honey
- 1/4 cup coconut oil (in liquid state)
- 1 Tbsp. brown sugar
- 1/2 Tbsp. cinnamon
- 1/2 Tbsp. vanilla extract
- 1/8 tsp. salt
Directions:
Step 1. Pour the oats in a medium bowl. Be sure to use rolled oats and not quick oats.
I love using Bob’s Red Mill Old Fashioned Rolled Oats because all of their oats are kiln roasted to give them that wholesome flavor. They’re also very rich in dietary fiber and can help reduce cholesterol.
Step 2. Mix the honey, coconut oil, brown sugar, cinnamon, vanilla, and salt together in a different bowl. Add the wet ingredients to the dry ingredients and stir until combined.
Step 3. Spread the mixture onto a rimmed cookie sheet. Bake at 300 degrees for about 45 minutes, stirring the mixture every 15 minutes.
Remove from the oven and let cool, then store in an airtight container.
My husband eats his granola just like this, plus a few chocolate chips. For me, I like to add my granola to vanilla yogurt loaded with sweet fresh fruit. Mmmmm….
It’s a great breakfast for those busy mornings when you’re in a hurry and are debating skipping breakfast or not because you’re short on time. This yogurt parfait makes me want to never ever forget about breakfast again.
If you like a more complex granola, feel free to add in some nuts and/or seeds as part of the oats mixture. Just be sure to keep the dry ingredients to wet ingredients ratio about the same, so it’s not too dry.
If adding dried fruit and/or chocolate is your thing, then be sure to add those after the granola has been cooked and is completely cooled.
Any way you eat it, making your own homemade granola recipe is always better than buying it from the store. It’s a healthy and delicious way to start off those busy mornings. Be sure to use this Bob’s Red Mill coupon to save even more money when making your granola at home!
