Every holiday season there are a few desserts I look forward to. Andes Mint cookies, magic cookie bars, and these Special K bars (also known as Scotcheroos). Special K bars are soooo delicious and addicting and are ridiculously easy to make!
With just a few ingredients and a few minutes you can make this delightful dessert too! My mom made these every Christmas growing up, and now I make them every year too.
I’m still not quite sure why we just enjoyed them at Christmas time, since they are perfect for eating year round. The combination of peanut butter, butterscotch, and chocolate in these Special K bars just might be dessert perfection!

Special K Bars
Ingredients:
- 1 cup sugar
- 1 cup corn syrup
- 1 cup peanut butter
- 6 cups Special K Cereal
- 1 cup chocolate chips
- 1 cup butterscotch chips
Directions:
Step 1. Combine the sugar and corn syrup together in a pot. Stir until the mixture boils, then remove from heat.
Step 2. Stir in the peanut butter, then the Special K cereal. Mix thoroughly.
Step 3. Pour the mixture into a 9×13 pan, then press down on the mixture.
Step 4. Melt the chocolate and butterscotch chips together on low heat in a small pan.
Pour onto the cereal bars and smooth with a knife.
Place bars in the refrigerator to cool, then cut into bars.
Enjoy! These Special K bars are so very delicious and very rich and are absolutely irresistible.
My favorite way to eat them is with an ice cold glass of milk. Yummmmm….
