Ingredients
2lbs.cut broccoli(about 2 small heads)
10slicesButterball Turkey Bacon
1c.Greek yogurt
1/2c.chopper red onions
1/2c.chopped cashews
5Tbsp.apple cider vinegar
3Tbsp.sugar(or sugar substitute)
Instructions
Place the 10 strips of turkey bacon onto a baking sheet covered with foil. Place the pan directly into the cold oven, set the timer for 20 minutes, then turn the oven to 375 degrees. Check the bacon after 20 minutes, then remove from the oven and let cool.
Once the bacon has cooled, crumble it into small pieces with your fingers, or chop with a knife.
Combine the Greek yogurt, the apple cider vinegar, and the sugar in a large bowl and mix with a wire whisk.
Add the broccoli, the turkey bacon, the onions, and the cashews to the dressing. Mix thoroughly. Refrigerate until cold, then serve!
